Instructions

1. Place the beans in a large bowl and cover with cold water. Soak the beans for at least 8 hours, or overnight. Drain and rinse the beans before using.

2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the oregano, thyme, smoked paprika, cumin, salt, and pepper and cook for another minute.

3. Place the beans in the Crock Pot, then add the vegetable broth and the onion mixture. Stir to combine. Add the ham cubes and stir again.

4. Cover the Crock Pot and cook on the low setting for 4-5 hours, or until the beans are tender. Stir occasionally and add more vegetable broth, if needed.
