Ingredients

  • 1 cup dry white beans
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 pound ham, cubed
  • 2 tablespoons chopped fresh parsley

Instructions

1. Place the beans in a bowl and cover with cold water. Soak overnight. The next day, drain and rinse the beans.

2. In the Instant Pot, combine the beans, broth, onion, carrots, celery, garlic, thyme, bay leaf, salt, pepper and cayenne pepper. Stir to combine.

3. Place the lid on the pot and lock in place. Make sure the valve is set to sealing. Select the manual/pressure cook setting and set the timer for 10 minutes. When the time is up, let the pressure naturally release for 10 minutes.

4. When the pressure has released, open the lid and stir in the ham. Select the sauté setting and let the soup simmer for 10 minutes. Stir in the parsley and season with salt and pepper to taste.
