Description

This easy white chicken chili crock pot recipe is the perfect dish for a chilly day. It's a delicious, creamy chili that's made with white beans, chicken, and a variety of flavorful spices. Plus, it's super easy to put together and it cooks low and slow in the crock pot so you can just turn it on and forget about it until dinner time. This recipe is sure to be a hit with the whole family!

Prep Time

This recipe requires 10 minutes of prep time. This includes chopping the onion and garlic, shredding the chicken, and measuring out the spices. Once the prep work is complete, you can just dump everything into the crock pot and let it do the rest of the work!

Cook Time

This recipe cooks for 4-6 hours on low in the crock pot. Since everyone's crock pot cooks differently, it's a good idea to check the chili after the 4-hour mark to make sure it's cooked through. You may need to leave it in for an additional hour or two for the flavors to fully develop.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 cans of white beans, drained and rinsed
  • 2 cups of chicken broth
  • 1 can of diced green chiles
  • 1/2 cup of heavy cream
  • 1/4 cup of chopped fresh cilantro

Instructions

1. Place the chicken breasts in the bottom of the crock pot. Top with the diced onion, minced garlic, cumin, oregano, chili powder, smoked paprika, salt, and black pepper. Stir to combine.

2. Add the white beans, chicken broth, and diced green chiles. Stir to combine.

3. Cover and cook on low for 4-6 hours, or until the chicken is cooked through.

4. Once the chicken is cooked through, remove it from the crock pot and shred it with two forks. Return the chicken to the crock pot and stir in the heavy cream and chopped cilantro. Taste and adjust seasonings, if desired.

5. Serve the chili hot with your favorite toppings. Enjoy!

Equipment

  • Crock pot
  • Cutting board
  • Knife
  • Measuring spoons
  • Two forks

Notes

If you don't have a crock pot, you can also make this chili on the stove top. Just brown the chicken in a large pot over medium-high heat and then add the remaining ingredients. Simmer for 25-30 minutes, or until the chicken is cooked through and the flavors have developed.
