Cook Time

Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 5 large egg yolks

Instructions

Preheat oven to 325 degrees F. Place 6 (4-ounce) ramekins in a large baking dish. Set aside.

In a medium saucepan, heat the cream and sugar until it starts to simmer. Remove from heat and let cool for 5 minutes.

In a medium bowl, whisk together the egg yolks and vanilla extract. Slowly pour the cream mixture into the egg mixture, whisking constantly. This will temper the eggs and ensure you don’t end up with scrambled eggs in your custard.

Carefully pour the custard into the ramekins. Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins. Bake for 40 minutes, or until the custards are set in the middle.

Carefully remove the ramekins from the baking dish and place on a wire rack to cool. Once cool, cover and chill in the refrigerator for at least 3 hours, or overnight.

Notes
