Crock pot beef stroganoff is a delicious, comforting and easy-to-make meal that is sure to please the whole family. This version uses lean beef, mushrooms and sour cream to create a creamy, flavorful sauce that is sure to satisfy. Serve this over egg noodles or mashed potatoes for a hearty and satisfying meal.

Prep Time

This meal takes about 10 minutes to prepare, and then can be left to cook in the crockpot for 4-6 hours. It is a great meal to make in the morning before work, or to let cook overnight for a delicious dinner when you get home.

Cook Time

This meal can be cooked in the crockpot for 4-6 hours. The longer it cooks, the more tender the beef will be. We recommend cooking it on low heat for 6 hours for the best results.

Ingredients

  • 1 pound lean ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (10.5-ounce) can condensed beef broth
  • 1 (1-ounce) packet dry onion soup mix
  • 1 cup sliced mushrooms
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

1. In a large skillet, cook the ground beef, onion, and garlic over medium-high heat until the beef is cooked through and the onion and garlic are soft. Drain off any excess fat.

2. In the bottom of a slow cooker, combine the beef broth, soup mix, mushrooms, and cooked beef mixture. Stir to combine.

3. Cover the slow cooker and cook on low heat for 4-6 hours.

4. Just before serving, stir in the sour cream and season with salt and pepper to taste.

Equipment

  • Slow cooker
  • Large skillet
  • Measuring cups and spoons
  • Spatula or wooden spoon

Notes

This meal can also be made in the oven. Simply preheat oven to 350°F and bake in a 9x13-inch baking dish for 25-30 minutes, or until the beef is cooked through. You can also make this recipe with ground turkey or chicken instead of beef.

Recipe Tips

For an even creamier stroganoff, try adding a tablespoon of butter or olive oil to the skillet when cooking the ground beef. You can also add a few tablespoons of flour to the slow cooker to thicken the sauce. Serve this stroganoff with a side of steamed vegetables or a crisp green salad for a complete meal.

This meal also freezes well. Simply let it cool completely before transferring to a freezer-safe container. When ready to eat, thaw overnight in the refrigerator and then reheat in a saucepan over medium-low heat. Enjoy!
