Ingredients

3½ pounds boneless beef short ribs

1 teaspoon salt

1 teaspoon pepper

2 tablespoons olive oil

2 onions, chopped

4 cloves garlic, minced

1 (14-ounce) can diced tomatoes

1 cup red wine

2 tablespoons Worcestershire sauce

2 tablespoons tomato paste

2 tablespoons chopped fresh thyme

1 teaspoon dried oregano

1 bay leaf

2 cups beef stock

Instructions

Season the short ribs with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the short ribs and sear until golden brown, about 3 minutes per side. Transfer the short ribs to the slow cooker. Add the onions, garlic, tomatoes, red wine, Worcestershire sauce, tomato paste, thyme, oregano, bay leaf, and beef stock to the slow cooker. Cover and cook on low heat for 6 hours or until the short ribs are tender and falling apart.

Recipe Tips

If you don't have red wine on hand, you can substitute it with beef stock or even apple juice. The flavor will be slightly different, but still delicious.
