Prep Time

Ingredients

  • 3-4 lb chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups beef broth
  • 1 large onion, chopped
  • 2 carrots, chopped

  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour

Instructions

  1. Season the chuck roast with the salt, pepper, garlic powder, onion powder, thyme, and oregano.
  2. Turn the Foodi on to the “Sear/Sauté” setting and heat the olive oil. Once hot, add the chuck roast and sear each side for 2-3 minutes.
  3. Add the beef broth to the Foodi.
  4. Add the onion, carrots, celery, garlic, Worcestershire sauce, and tomato paste. Stir to combine.
  5. Place the lid on the Foodi and seal the steam release valve. Set the Foodi to the “Pressure Cook” setting and set the timer for 45 minutes.
  6. When the timer is done, allow the Foodi to naturally release pressure for 10 minutes, then manually release any remaining pressure.
  7. Carefully remove the lid and transfer the roast to a cutting board.
  8. In a small bowl, whisk together the flour and 1/2 cup of the cooking liquid from the Foodi.
  9. Add the flour mixture to the Foodi and stir to combine.
  10. Set the Foodi to the “Sear/Sauté” setting and simmer for 5 minutes, stirring occasionally, until the gravy thickens.
  11. Slice the roast and serve with the vegetables and gravy.
