Ingredients:


- 5 potatoes, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup half-and-half
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 2 tablespoons chopped fresh parsley

Instructions:


1. Place the potatoes, onion, garlic, and vegetable broth into the Instant Pot.
2. Close and seal the lid of the Instant Pot and set the vent valve to the “sealing” position.
3. Cook on high pressure for 8 minutes.
4. Once the cooking time is done, quick release the pressure by carefully turning the vent valve to the “venting” position.
5. Once the pressure has been released and the valve has dropped, carefully open the lid.
6. In a small bowl, whisk together the half-and-half and flour.
7. Turn the Instant Pot to the “saute” setting and add the half-and-half mixture, butter, and thyme.
8. Cook, stirring often, until the soup has thickened.
9. Taste and season with salt and pepper as needed.
10. Serve the soup topped with the fresh parsley.
