Ingredients

  • 1 lb stew beef, cut into cubes

  • 2 bay leaves
  • 1 cup Guinness beer
  • 2 cups beef broth

Instructions

1.Turn the Instant Pot to the sauté setting. Add the olive oil, beef cubes and onion to the pot and cook for about 5 minutes, stirring occasionally. Add the carrots, celery, garlic, thyme and bay leaves and cook for an additional 5 minutes.

2.Add the Guinness beer, beef broth and tomato paste to the pot and stir to combine. Sprinkle the flour, salt and pepper over the top and stir until everything is combined. Close the lid and make sure the pressure valve is set to sealing.

3.Set the Instant Pot to the manual setting and cook for 25 minutes. When the cooking time is up, carefully turn the pressure valve to venting and let the pressure release. Once the pressure is released, open the lid and stir in the potatoes.

4.Close the lid and cook for an additional 10 minutes. When the cooking time is up, carefully turn the pressure valve to venting and let the pressure release. Once the pressure is released, open the lid and serve the stew.
