Ingredients
- 2 tablespoons olive oil

- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1/4 cup chicken broth
- 2 tablespoons butter
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
1. In the Instant Pot, add the olive oil, garlic, lemon juice, oregano, basil, red pepper flakes, paprika, salt, and black pepper. Stir to combine.
2. Add the chicken cubes and stir to coat.
3. Add the chicken broth and stir to combine.
4. Place the lid on the Instant Pot and lock it in place. Set the pressure valve to sealing.
5. Set the Instant Pot to manual high pressure for 8 minutes.
6. When the cooking time is done, do a quick release and open the lid.
7. Add the butter and Parmesan cheese and stir to combine.
8. Serve over basmati rice and garnish with chopped parsley.
