Ingredients

  • 2 lb beef chuck roast

Instructions

Preheat the oven to 300°F. Heat the olive oil in a large Dutch oven over medium-high heat. Season the chuck roast with salt and pepper and then brown it on all sides. Add the onion, garlic, oregano, basil, thyme, and paprika and sauté until the onion is softened and fragrant, about 5 minutes. Add the bay leaves, broth, and tomato paste and stir to combine. Add the potatoes and carrots and stir. Bring the mixture to a boil, reduce the heat to low, cover the pot and cook for 1 hour.

After 1 hour, remove the lid and continue to cook for an additional hour, or until the meat is tender and the vegetables are cooked through. Once the pot roast is cooked, remove it from the oven and let it rest for 10 minutes before serving. Serve with your favorite side dishes and enjoy!
