Ingredients

  • 2-3 lbs. of eye of round, cut into cubes
  • 1 yellow onion, diced
  • 2 cloves of garlic, minced
  • 2 cups of beef broth
  • 2 tablespoons of Worcestershire sauce
  • 1 tablespoon of tomato paste
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh parsley, chopped
  • 1 tablespoon of fresh thyme, chopped
  • Salt and pepper to taste

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook until it is softened and lightly browned, about 3-4 minutes. Add the garlic and cook for another minute.

2. Transfer the onion and garlic to the crock pot. Add the beef cubes, beef broth, Worcestershire sauce, tomato paste, parsley, thyme, salt, and pepper. Stir to combine.

3. Cover and cook on low for 8-10 hours. The beef should be very tender.

4. Serve over mashed potatoes, egg noodles, or rice. Enjoy!

Notes

This recipe can easily be doubled or tripled for larger groups. You can also use chuck roast in place of eye of round. To make it even more flavorful, add a few slices of bacon to the crock pot before cooking.

Recipe Tips
