Ingredients

  • 2 tablespoons of olive oil

  • 1/2 teaspoon of dried thyme
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of red pepper flakes
  • 1/2 cup of heavy cream
  • 2 tablespoons of butter
  • 1/2 cup of crumbled bacon
  • 1/3 cup of shredded cheddar cheese
  • 1/4 cup of chopped fresh parsley

Instructions

1. Set the Instant Pot to the “saute” function. Add the olive oil, onion, and garlic. Cook for 3-4 minutes, stirring occasionally, until the onion is tender.

2. Add the flour and stir until combined. Cook for 1 minute, stirring constantly.

3. Add the vegetable broth, potatoes, thyme, black pepper, and red pepper flakes. Stir to combine.

4. Secure the lid and set the Instant Pot to the “soup” setting. Cook for 10 minutes.

5. When the cooking time is complete, let the pressure release naturally for 10 minutes, then manually release the remaining pressure.

6. Add the heavy cream, butter, bacon, cheddar cheese, and parsley. Stir to combine.

7. Serve the soup hot, with extra bacon and cheese, if desired.
