Cook Time

Once the ingredients are added to the crockpot, this vegetable beef soup takes about 6 hours to cook on low heat. The total cook time is 6 to 8 hours, depending on the temperature of your crockpot. If you’re short on time, you can also cook the soup on high heat for 3 to 4 hours.

Ingredients

  • 2 lbs beef stew meat
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley

Instructions

1. Place the beef stew meat in the bottom of the crock pot.

2. Add the onion, garlic, carrots, celery, tomatoes, beef broth, oregano, bay leaf, salt and pepper.

3. Cover and cook on low heat for 6 to 8 hours, or on high heat for 3 to 4 hours.

4. 30 minutes before serving, add the frozen corn, peas and parsley.

5. Taste and adjust seasoning, if necessary.

6. Serve hot.

Notes

This soup can also be cooked on the stovetop. Simply brown the beef in a large pot over medium heat, add the remaining ingredients and simmer for about 2 hours, or until the beef is tender. If you prefer a thicker soup, you can add 1/4 cup of all-purpose flour to the pot and stir to combine.
