Favorite Easy Instant Pot Recipes

Tomato Soup
This delicious tomato soup is one of my favorite instant pot recipes. It’s easy to make and requires just a few simple ingredients. It’s also a great way to use up extra tomatoes you may have in your fridge.
Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 pounds tomatoes, diced
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup heavy cream (optional)
Instructions:
1. Turn the Instant Pot to the sauté setting. Add the olive oil and onion and sauté for 4-5 minutes.
2. Add the garlic and sauté for an additional 1-2 minutes.
3. Add the tomatoes, vegetable broth, oregano, basil, salt, and pepper.
4. Secure the lid and make sure the valve is set to sealing. Set the Instant Pot to manual/high pressure for 4 minutes.
5. When the cooking time is up, quick-release the pressure and remove the lid.
6. Use an immersion blender to blend the soup until smooth.
7. Add the heavy cream (if desired) and stir to combine.
8. Enjoy!
