Description

When it comes to cooking a delicious meal quickly, nothing beats an Instant Pot. This frozen brisket recipe is a perfect example of just how easy and tasty a meal you can pull off with the help of a pressure cooker. This flavorful and tender brisket is cooked in a delicious red wine sauce, and is perfect for a weeknight dinner, or a special occasion. You can also adjust the ingredients to make it your own, and have a new dish every time you make it.

Prep Time

Preparing the brisket only takes a few minutes. All you need to do is season the brisket with salt and pepper, and then place it in the Instant Pot. The rest of the work is done by the pressure cooker.

Cook Time

The cook time for this frozen brisket recipe is approximately two hours. This may vary slightly depending on your Instant Pot, but it should be done within two hours.

Ingredients

  • 4-5 lb frozen brisket
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef stock
  • 1 tablespoon tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

1. Season the frozen brisket with salt and pepper. Place the brisket in the Instant Pot and set it to the "Sauté" setting. Add the olive oil and heat until the oil starts to shimmer. Add the diced onion and garlic and cook until softened, about 5 minutes.

2. Pour in the red wine and scrape the bottom of the pot to deglaze. Add the beef stock, tomato paste, bay leaves, thyme, salt, and pepper. Place the lid on the Instant Pot and set it to "Manual" for 120 minutes.

3. When the time is up, let the pot naturally release for 10 minutes, then do a quick release. Carefully remove the brisket from the pot and let it rest for 10 minutes before slicing and serving.

Equipment

  • Instant Pot
  • Knife
  • Cutting board
  • Spoon

Notes

It’s important to make sure your frozen brisket is completely thawed before putting it in the Instant Pot. If it’s still partially frozen, it won’t cook properly.

Recipe Tips

This frozen brisket recipe is perfect as is, but if you want to switch it up a bit, try adding some sliced mushrooms or carrots to the pot. You can also try using a different type of red wine, such as a Merlot or Cabernet Sauvignon. Finally, if you’re looking for a heartier dish, try adding some potatoes to the pot with the brisket.
