  • 3 cups cooked, shredded chicken
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened and translucent, about 5 minutes.

2. Add the bell pepper and jalapeno and cook for an additional 3 minutes.

3. Add the chili powder, cumin, oregano, salt, and pepper and stir to combine.

4. Place the onion mixture in a slow cooker. Add the black beans, diced tomatoes, chicken broth, and diced green chiles. Stir to combine.

5. Add the chicken and stir to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.

6. Add the lime juice and cilantro and stir to combine. Serve hot.
