Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 lbs of beef, cubed
- 1/2 teaspoon of paprika
- 1 teaspoon of dried oregano
- 2 tablespoons of tomato paste
- 1 cup of beef broth
- 2 potatoes, peeled and cubed
- 2 carrots, peeled and diced
- Salt and pepper to taste
Instructions
Start by adding the olive oil to the Instant Pot and set it to “saute”. Once the oil is hot, add the onion and garlic and cook for about 3 minutes, until the onion is softened. Add the cubed beef and cook for an additional 5 minutes. Add the paprika, oregano, tomato paste and beef broth. Give everything a good stir and then add the potatoes and carrots. Secure the lid on the Instant Pot and set it to “manual” and cook for 20 minutes.
Once the timer goes off, carefully release the pressure and open the lid. Give the goulash a good stir and season with salt and pepper to taste. Serve the goulash with a side of crusty bread or mashed potatoes. Enjoy!

Notes
