Prep Time

This dish takes only 15 minutes to prepare. You'll need to have all your ingredients prepped and ready before you start cooking.

Cook Time

The chicken pot pie will take around 45 minutes to cook. This includes the time it will take to assemble the dish, bake the puff pastry lid, and cook the filling.

Ingredients

  • 1kg chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 200g button mushrooms, sliced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 tablespoons plain flour
  • 2 cups chicken stock
  • 3 tablespoons cream
  • 1 sheet puff pastry
  • 1 egg, beaten

Instructions

Preheat the oven to 200°C. Heat a large cast iron skillet over a medium-high heat and add the olive oil. Once the oil is hot, add the chicken breasts and cook for 3-4 minutes on each side or until golden brown. Remove from the skillet and set aside.

Add the onion, garlic, mushrooms, carrots, and celery to the skillet and cook for 3-4 minutes until softened. Add the flour and cook for a further minute. Slowly add the chicken stock, stirring constantly until the mixture comes to the boil. Reduce the heat to low and simmer for 10-15 minutes or until the sauce has thickened.

Add the chicken back to the skillet and pour over the cream. Stir to combine and season with salt and pepper. Transfer the skillet to the oven and bake for 20 minutes or until the chicken is cooked through.

Notes

If you don't have a cast iron skillet, you can use a regular ovenproof skillet. If you don't have access to an oven, you can also cook the filling on the stovetop and transfer it to an ovenproof dish before topping with the pastry.
