Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup pineapple chunks, canned
- 1/4 cup green onions, chopped
- 2 tablespoons sesame seeds, for garnish
Instructions
1. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, ground ginger, black pepper, and salt. Rub the chicken breasts with the spice mixture.
2. In a medium bowl, mix together the soy sauce, honey, ketchup, brown sugar, rice vinegar, sesame oil, garlic, and red pepper flakes.
3. Place the chicken breasts in the Instant Pot. Pour the sauce over the chicken.
4. Secure the lid and set the steam release valve to “sealing”. Select the “pressure cook” setting and set the timer for 10 minutes.
5. When the timer beeps, quick release the pressure.
6.Carefully remove the chicken from the Instant Pot and place it on a plate.
7.Turn the Instant Pot to the “sauté” setting.
8.Add the pineapple chunks and green onions to the pot. Simmer for 5 minutes, stirring occasionally.
9.Add the chicken back to the pot and simmer for another 5 minutes.
10.Serve the chicken topped with the pineapple sauce and garnished with sesame seeds.
