Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup milk
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas
  • 1/2 cup all-purpose flour
  • 2 tablespoons butter, melted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk

Instructions

1. Place the chicken breasts in the bottom of the crock pot. Top with the onion, garlic, carrots, celery, chicken broth, thyme, oregano, salt, and pepper. Cover and cook on low for 8 hours or on high for 4 hours.

2. When the chicken is cooked through and tender, remove it from the crock pot and set aside. Shred the chicken with two forks and set aside.

3. In a small saucepan, melt the butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the milk and continue to whisk until thickened. Stir in the frozen corn and peas and cook for 1 minute. Pour the sauce over the chicken in the crock pot.

4. In a medium bowl, whisk together the flour, melted butter, baking powder, and salt. Gradually add in the milk and stir until a thick dough forms. Drop tablespoon-sized portions of the dough onto the top of the chicken and sauce in the crock pot.

5. Cover and cook on low for an additional 45 minutes, or until the dumplings are cooked through.

Notes
