- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup vegetable broth
- 2 cups cooked quinoa
Instructions
1. Turn on the Instant Pot to the sauté setting. Heat the olive oil and add the onion, garlic, and bell pepper. Sauté for 3-4 minutes until the vegetables are soft.
2. Add the chili powder, cumin, smoked paprika, oregano, sea salt, and black pepper. Stir to combine.
3. Add the diced tomatoes, black beans, kidney beans, vegetable broth, and quinoa. Stir to combine.
4. Secure the lid and turn the valve to the sealing position. Set the Instant Pot to high pressure for 10 minutes.
5. Once the chili is done cooking, quick-release the pressure. Stir the chili and serve.
